Shaved Asparagus Salad

1. Get your ingredients

  • 1 bunch asparagus

  • 1 lemon

  • 2 tsp yellow or white miso paste

  • Plant-based butter

  • 1 bunch fresh mint

  • ½C panko bread crumbs

  • Olive oil

  • Salt

This is my favorite plant-based butter, hands-down

2. Gather your equipment

  • Chef’s knife

  • Cutting board

  • Medium bowl for trash and scraps

  • Clean kitchen towel

  • Vegetable peeler

  • Dry measuring cups

  • Measuring spoons

  • Citrus juicer

  • 10” or 12” nonstick pan

  • Silicone spatula
